The Québec City Convention Centre hosted a beer-centric lunch featuring microbrewery beers during the 6th edition of Québec’s Microbreweries Convention, held November 16 to 18, 2015.
Close to 300 delegates from Québec’s brewing industry feasted on a three-course meal prepared by the Convention Centre’s culinary brigade, led by Executive Chef Gérard Michel and presented in collaboration with Philippe Wouters, beerologist and Bières et Plaisirs editor, a French publication dedicated to everything beer related. This beer and food expert is an influential figure for Québec’s beer industry, having created flavour profiles for grocery stores IGA. These profiles help perfectly pair beer and food.
Delegates at the Microbreweries Convention were treated first to a duck tataki lacquered with Scotch Ale caramel made from L’Alchimiste and Chimay Bleue beers, served with citrus and sesame vegetables. The appetizer was paired with Dominus Vobiscum blanche from the Charlevoix region.
A chicken waterzooi à la gantoise was then served. The entrée, a typical Belgian chicken and fish stew, was served with Kellerbier & Brett beer, an exclusive brew.
Sweet tooths then enjoyed a triple beer tart made with La Maudite beer and brown sugar. The decadent dessert was paired with a Canon lager forte, a Doppelbock type beer.
The 6th edition of Québec’s Microbreweries Convention, organized by Québec’s Microbreweries Association, not only features a tradeshow but also numerous acclaimed speakers to celebrate the 25th anniversary of the Association.
